Hostservice were excited when Ko approached us to help with the design and fitout of his new restaurant. The space at 241 Hardy Street posed some challenges particularly in regard of the ventilation. The space had previously been used for offices and was at the bottom of a multi story building, meaning there was no way to provide vertical discharge ventilation. As well as this, Ko wanted to ensure the extract system was quite and unobtrusive looking so as not to compromise the restaurant's atmosphere. Selecting electric appliances aided in reducing the airflow, combined with electrostatic precipitators, we were able to use a horizontal discharge and make Ko's dream a reality. He is very happy with the result:
"The design is excellent that you won't get with other conventional restaurant hoods, the noise level is reduced to more than half I would say. That creates a really good environment for this dining room"
Featuring in the kitchen is a Houno Combislim oven. At just 600mm wide, this combi oven takes up only a small amount of valuable cooking line space while providing top-end functionality. In Ko's words:
"This can give us the precision to do what we wanted, it gives us the quality of the food, more control, the accuracy"
